Even though the pain-filter doesn’t produce crema from the coffee as the Italian coffee machine normally does (the crema contains 2% fat when correctly extracted, more pleasant to taste), yet the taste without crema in our Vietnamese coffee is smooth and best when served with ice. Now, what is best about Vietnamese coffee is not much about the coffee itself, it’s about something else.
